Barley Tuna Salad
On a hot, summer day, try this easy-to-prepare, low-calorie salad using whole grain, fish, and vegetables - a win, win!

Honey-Mustard Salad Dressing
This salad dressing is excellent on any salad. Try it with spinach leaves, sliced mushrooms and red onion rings. Use it to dress up a side of steamed green beans. Also makes a great dip for chicken fingers.
If dressing seems too runny, add a bit more mayonnaise. Or use Greek yogurt in place of mayonnaise.

Mandarin Orange Almond Salad
Ingredients:
8 slices bacon
2/3 cup sugar
2 T. cornstarch
1 1/2 t. salt
Dash pepper
3/4 cup vinegar
1/2 cup water
1 1-pound can (2 cups) each:
kidney beans, cut green beans, green Lima beans, cut wax beans, and garbanzo beans, all drained.
Ingredients:
1/3 cup sliced almonds
2 T. sugar
1/2 head iceberg lettuce
1 small bunch romaine
1 cup celery
3 T. chopped green onion (red works too)
3 T. snipped parsley
Large can mandarine oranges
Dressing:
1/3 cup olive oil
3 T. sugar or honey
3 T. vinegar
1/2 t. salt
1/4 t. pepper
1/4 t. red pepper sauce (optional)
Shake; store in refrigerator. |
