This pizza crust gets a touch a sweetness using Bear Luv-Un's Sweet Clover Honey and strength using Cream of the West's Whole Grains. Pile on the toppings!

This dough makes a delicious thick crust pizza or to-die-for calzones - not to mention just a great loaf of bread!

Ingredients:

1 1/2 + 1/3 c. warm water
2 t. yeast, active dry
2 T. olive oil (I give it a couple healthy glugs)
2 T. honey (I use a couple soup spoon-size scoops)
1 T. kosher salt
4 1/4 c. all-purpose flour or bread flour
1/4 c. roasted wheat cereal
1 c. roasted quick oats cereal

Instructions:

Dissolve yeast in warm water in bowl of stand mixer. Add the rest of the ingredients, and mix on low speed 3 to 4 minutes, until dough forms a loose ball. Let rest for 5 minutes. Mix again on medium-low speed for about 2 minutes, until dough clears the sides of the bowl. Dough should be soft, but if it appears too sticky, mix in additional flour by tablespoons. Likewise, if mixture appears too dry, particularly during first mixing, mix in additional water by tablespoons.

Remove dough from mixing bowl, shape into a ball, and place in a clean bowl that has been drizzled with additional olive oil. Cover with plastic wrap and let rise in a warm place for 1 to 1 1/2 hours, until doubled in bulk.

Makes 3 good size (8 to 10 inch?) thick crust pizzas or 4 to 6 large calzones. Or makes 2 small bread loaves.
